Our new Teas arrived yesterday and Brishan made my (and Walt’s) favorite soup in the world: Tom Kha Gai (Thai Coconut Ginger Soup). Rice noodles, Chicken breast, carrots, red peppers, and mushrooms are cooked in a lightly spiced coconut milk and ginger infused chicken broth, then are topped with fresh cilantro and basil. The soup is garnished with a small lime wedge to add a slight fruit acid note – this soup will make you feel balanced, happy, and cure your boredom with typical chicken noodle soups.
