Good afternoon, today 180° Personal Trainer Natalie Whitworth conjures up this delicious recipe to keep us fuller for longer without sacrificing taste! Honey and Lemon Grilled Chicken with Baked Sweet Potato Wedges This is quick and easy to make. Sweet potatoes are bursting with three top- class antioxidants: vitamins C, E and beta carotene. As a low-GI food, sweet potato releases carbohydrates slowly and this action is further slowed by the acid in the lemon. Serve with a mixed green salad. Serves 2 1tbsp lemon juice 1/2 tbsp honey 1/2 tbsp ground ginger 3 tbsp olive oil 2 skinned and boned chicken breasts 1 large sweet potato ( about 300g ) Sea salt and freshly ground black pepper Preheat the oven to 200C/gas mark 6 Mix together the lemon juice, honey and ground ginger. Add 1 tsp olive oil. Coat the chicken breasts with the marinade. Cover and chill for 20 mins. Scrub the sweet potato and cut into thin wedges about 5mm thick, then toss into a bowl with 1 tbsp olive oil. Season with salt, tip onto a nonstick baking tray and roast for 15 mins. Turn over the pieces with a wooden spatula, then roast for a further 10-15 mins, until they are cooked. Meanwhile, preheat a griddle pan on the hob. Remove the chicken breasts from their marinade. Season with salt and pepper and rub in 2 tsp of olive oil. Cook for a for approx 4-5 mins each side or until cooked through. Serve with the sweet potato wedges and a mixed green salad.
