Good morning! First off Happy Labor Day! Enjoy whatever you will be doing, hopefully spending some Time with family and friends. Saturday I made freezer jam, I think its called freezer jam because you can keep in freezer for up to a year, but you dont need to put it in freezer to set, it will do it fine in the refrigerator or on counter. Important!!! When making freezer jam, make sure the strawberries and fruit you are using are sweet and ripe. And this weekend the strawberries and raspberries Frys Food Stores were .88 and were the best I have tasted in a long time . I am heading back there today. 1. Purchase Mrs. Wages no cook freezer jam pectin (in photo). That will make about 6 - 1/2 pint jars. I changed the recipe a tad. 2. Place packet of pectin in bowl and I used 1 cup of Splenda and then mix it using a whisk. (since the strawberries are already sweet, I wanted more of the natural sweetness than the Splenda.) 3. I used 3 packages of strawberries crushed up with like a hand potato masher or something like that. Then put 5 cups of crushed strawberries in the pectin/ Splenda mixture and stir with a whisk. I turned timer on and stirred for 3 minutes. 4. I then took a small measuring cup and scooped the jam into each jar, screwed on the lids and let them sit on counter for 30 minutes until they set. 5. Yea! You are done! Either put them in your fridge for 3 weeks or in freezer. And for Labor Day grilling. I have created this tried and tested marinade for chicken kabobs. Something you can make now and then leave in fridge til you are ready to grill. The marinade is 1/2 cup red wine vinegar 2 T coconut oil 4 tsp low sodium tamari (its in the aisle next to soy sauce) 1 cup pineapple juice ( I use the juice from a can of pineapple chunks ) then use the chunks on my skewers. 1/2 tsp ground ginger 1 tsp fresh minced garlic (or 2 cloves) Stir it together. I cut my chicken breasts, which are also on sale @frysfoodstores (buy 1 get 2 free) and cut them in 1 chunks , put them in the marinade, cover with plastic and in fridge for a few hours. Then stack skewers with the chicken chunks, bell peppers, mushrooms, cherry tomatoes, pineapple, onions, whatever you feel and any combination. (dont put 2 pieces of chicken next to eachother on skewer, it doesnt cook as fast.) Spray with Pam or brush with ice oil, and put on hot grill. Make sure you turn them, they will be on the grill at least 15 minutes you want the chicken cooked. Have fun grilling and happy Labor Day!
