Good morning HANS family😊 I was craving homemade chicken soup yesterday so I made a big pot for dinner last eve. But I was too tired to post last night haha...its a real simple recipe and remember you can always alter any ingredients to fit your meal plan/dietary needs. The ingredients are based on enough to feed 7 people 😊 and leftovers for next days lunch. -6 boneless chicken breasts cooked and shredded -6-8 carrots -4 stalks of celery -1 cup chopped kale -1/2 package of a 16oz bag of wide egg noodles (they expand and will soak up your soup if you use the entire bag Ive learned) -4 cans of low sodium chicken broth (use 2 cans if you are adjusting the recipe, you will cook the chicken in the broth and water) -6-8 cups of water (Again depending on the size of your pot and servings you are going to prepare) -A couple shakes of dried parsley -White or black pepper to taste 1.5 teaspoon of ground coriander (adjust to .5-1 teaspoon if making less) You may add a pinch or two of garlic salt depending on your preference. ALWAYS taste the soup BEFORE adding additional salt. Or dont add any at all! 😉 Cook the chicken in the chicken broth and water until done, remove, shred and return to the pot. Add the carrots, celery and kale let cook at a low boil for about 15 mins or until the carrots are tender. Add the egg noodles and give a good stir, put a lid on the pot and turn off the heat, the noodles will cook themselves in the hot soup without additional heat. Let stand for about 12-15 minutes and your soup should be complete. 😊 Im not the best at writing out recipes or instructions, I do better in person, I LOVE TO TALK! Lol 😉 Enjoy! And whenever you prepare a meal, prepare it with love. Sounds kinda silly but my grandmother taught me that when you are making a meal for yourself or others do it because you want to, with care. If you feel its a burden to you, then dont do it at all.
