Good morning all! What a glorious Saturday it is! So back to baking some yummy yet healthy desserts ! Why not try this delicious gluten free peach polenta & ricotta cake ! Its a great light dessert option for summer, and it uses fresh in season produce ! You will need: 250g ricotta 1/2 cup Greek yogurt 2 while eggs 1 cup gluten free Flour ( I used white wings) 150g uncooked polenta grains 50g butter or coconut oil 3/4 cup stevia or honey / maple syrup Juice and zest of 2 lemons 2 sliced peaches and 1/2 cup blueberries Dollop of Greek yogurt to serve Method: 1) Preheat oven to 180c 2) mix dry ingredients together, and gradually mix in the wet ingredients. Arrange sliced peaches in top of cake batter , and add blueberries in centre. 3. Bake for -30 mins or until golden. 4. Cool and serve with a dollop of Greek yogurt ! Enjoy ! Xxx
