Good morning everyone! Menu stays mostly the same today, and then gets some big changes starting tomorrow. At least one tartine should change, possibly over to something involving egg, garlic chives, pickled ramps. Annie brought us a ton of day lilies, and were thinking about putting those with some goat were getting in today. Lots of butter-making for lots of pastry means lots of buttermilk, which were actually putting back into the pastry - but that only gets us so far, so we made some beautiful ricotta out of it yesterday, which well use in a dumpling dish along with more of Robs beautiful shaved asparagus, some morels that Ethans mom brought us, and perhaps some pea tendrils and flowers. Oh! And how about some cultured green garlic soup! All this starting tomorrow. On the pastry side, well start doing kouign amman daily, which should add a nice balance of sweet to our offerings, and more of our nasturtium honey bran muffins. Expect some more infused croissants come the weekend. And finally, to pair with Darko and Xaviers coffee tasting on Friday well have some awesome oat flour macarons filled with acacia flower buttercream. Coffee tastes will be on Darko and Xavier, macarons on us, so do stop by between 8:30 and 10:30 on Friday - it should be a love fest of folks in love with what they do. Oh! Almost forgot! Were playing with some new breads, which were very excited about. Weve got a buttermilk country bread and a whole wheat oriented bread with some rye in it today. They looked beautiful yesterday going into overnight proofing, so look out for those as well!
