Good news! Amaranth has now been introduced to our Adopt-a-Village sustainable gardens. (Pictured here are three types, evidenced by the different colors of maroon, green, and orange). Once used as a staple food of the pre-Columbian Aztecs, its use was prohibited upon arrival of the Conquistadores, due to its religious uses. As part of our ongoing program to combat the endemic hunger here, we have added this valuable plant to four other ancient plant foods that are outstanding in nutritional value. For instance, the leaf is greatly superior to beets, Swiss chard and spinach. Amaranth, commonly referred to as a grain, is technically a seed. Compared to other grains amaranth seeds have a much higher content of the minerals calcium, magnesium, iron and of the amino acid Lysine. The seeds are also high in potassium, zinc, Vitamin B and E and can contain over 20% protein. Adopt-a-Village is now in the process of collecting seeds for use in our village garden program for 2015.
