Got up this morning and started preparing food for our Annual Marigold Fish Fry with all the neighbors today! Trying some Pig Shots for the 1st time on my Big Green Egg ... I think theyll go over really well. Cut some Polska Kielbasa sausage into 1/2 thick disc, wrapped them with thick cut bacon & stuck with a toothpick. This formed a little cup or shot glass to fill with a mixture of Cream Cheese, Green Chillies, and some shredded Mexican Cheese. Dusted it all lightly with a good BBQ Rub and sprinkled some Brown Sugar on top! Plan on slow smoking these babies for a couple hours at low temp so I dont boil all the cheese out of them. Then it will be time to head to the party to enjoy some great company!
