Great British Bake Off Cherry Cake The annual cakecitement of GBBO started again last night. I finished throwing Small Himself into bed with just enough time to make a cake in a mug and sit down, ready to judge people who are much better at baking than I. I thought it would be a fun idea to try to do one of the challenges every week but in a free from version. I instantly thought this was a terrible idea when the first challenge was a Swiss roll. There is nothing more grim looking than an egg free, dairy free Swiss roll. And as for the 30 something miniature cakes? I would eat them all and it would take a shoehorn and a pound of butter to get me out of the front door. Again. The cherry cake seemed like a better option. I knew there was a reason I bought that bundt tin in Aldi three years ago. Gluten Free, Vegan Cherry Cake. Makes one small bundt cake and a few extra cherry jumbles depending on the size of your bundt. Ingredients. 500ml soya milk 3 tsps lemon juice 400g plain gluten free flour 50g cornflour 200g caster sugar 2 tsp gluten free baking powder 1/2 tsp bicarbonate of soda 150ml vegetable oil 1 tsp vanilla extract 200g glacé cherries, chopped Icing. 200g icing sugar 1-2 tsp lemon juice About 4-5 cherries, halved Method. 1. Measure out the soya milk and stir in the lemon juice. Itll curdle and that, again, try not to vom. 2. Sieve the flour, corn flour, baking powder, bicarbonate of soda and sugar into a bowl. 3. Stir in the lumpy milk, oil and vanilla extract. 4. Pour the mixture into a prepared bundt tin. You can either oil it or use cooking spray. 5. The mixture is very watery so the cherries will sink and disappoint Mary Berry but you can help it along a bit by popping the cherries on to the top of the batter so they cant sink all the way down. 6. Bake in a 160c oven for 35-40 mins. 7. Leave it in the tin for a few minutes when you remove it from the oven. You can use this time to pray that the cake will come out of the tin. Maybe dont google how to get your bundt out easily. That could throw up all sorts. 8. While the cake cools mix the icing sugar with the lemon juice a small bit at a time. It should be quite thick. Once the cake is fairly cool, drizzle over the icing and artfully place the cherry halves on top. The cherries did indeed sink. And I still havent found the perfect vegan sponge. This one is quite nice but a bit heavy. It looks super pretty though but who wants a cake that just looks nice? Small Himself said it was 100 out of 100 and totally awesome but he may have just been buttering me up. Ill need a small cake tin washing pixie to get all the cake remnants out of my bundt now though. And yes, bundt is my new favourite word.
