Great appetizer for the holidays, by Maricel Jesurun Weller...unique, too! Mexican Cheesecake The Recipe 1 pound cream cheese, softened 2 C. (8 oz.) shredded sharp cheddar cheese 2 C. sour cream, divided 1 1/2 packages taco seasoning mix 3 eggs, room temperature 1 (4 ounce) can green chiles, drained and chopped 2/3 C. salsa 2 cans chicken 1. In large bowl, combine cheeses. Beat until fluffy. 2. Stir in 1 C. sour cream and taco seasoning. 3. Beat in eggs, one at a time, mixing well after each addition. 4. Fold in chiles. 5. Pour into 9-inch spring form pan. 6. Bake at 350 for 35 to 40 minutes or until center is firm. 7. Remove from oven. Let cool 10 minutes. 8. Spoon remaining 1 C. sour cream over cheesecake. 9. Bake 5 minutes longer. Cool completely. 10. Cover and refrigerate several hours. 11. Before serving, remove sides of spring form pan and top with salsa. 12. Serve with plain taco chips.
