Greek Quinoa Egg Bake - Breakfast LOVE recipes!! Come FOLLOW ME! I am always posting awesome stuff on my timeline! You can find me at https://facebook/TruckerWifeVickiSuddaby 4 large egg ¼ cup skim milk ½ t minced garlic 1 small onion - diced 1 cup spinach – chopped 1 cup mushrooms – chopped ½ t Cavender’s All Purpose Greek Seasoning**** 4T feta cheese 3T quinoa, uncooked Coconut oil or butter I bake this in 2 – 16 oz Corning Ware baking bowls. You could adjust the ingredients and bake it in anything you want though. Grease bowl well with coconut oil, cooking spray or butter. Sprinkle 1 ½ T of uncooked quinoa into the bottom of each bowl. Chop up onion, spinach and mushrooms…divide and layer into each bowl. Sprinkle 2 T of feta cheese over the top of each bowl. Beat the eggs with milk, Cavender’s and garlic. Pour the egg mixture over the top of the veggies – dividing evenly between the bowls. Bake at 350 for approximately 50 minutes. Give it a shake and if nothing jiggles, it’s done. Run a knife along the edge and then turn them out of the bowls. I like to make these up the night before then bake in the morning.
