Green Beans Gremolata 2 pounds French Green Beans 1/3 cup finely chopped fresh flat-leaf Parsley 1/3 cup freshly grated Parmesan Cheese 1/4 cup roasted Pine Nuts (can also use Almonds) 2 Tbsp. freshly grated Lemon Peel (can also use Orange Peel) 4 tsp. finely chopped Garlic (about 4 cloves) 1/4 cup Olive Oil Kosher Salt & Black Pepper Heat large pot of water to boiling. Add beans and cook 3-5 minutes. While they are cooking, fill a large bowl with ice and cold water. Drain the beans well and transfer to the ice water. Stir until the beans are completely cool. Drain well and pat dry with a paper towel. Prepare Gremolata: Combine parsley, Parmesan, pine nuts, lemon peel and garlic. To Serve: Heat oil in a saucepan on medium-high heat. Add the beans. Cook 2 minutes or until hot and coated with the oil. Remove from the heat. Sprinkle with Gremolata. and the salt and pepper. Enjoy!!! Makes 8 servings!
