Growing up in my mothers home everyday had its own meal and theme. Mondays had Red Beans & Rice. Tuesdays had White Beans & Rice, and Wednesdays Oh lets just say Wednesdays was my FAVORITE day of the week. Italian Wednesdays had anything from HOME MADE PIZZA, SPAGHETTI & MEATBALLS to LASAGNA. Dont forget to order our COOKBOOK here cindysgiftstore/products/cindys-louisiana-home-cooking-vol-2 HOME MADE PIZZA RECIPE Ingredients: 1 loaf (1 pound) frozen bread dough, thawed 2 tablespoons olive oil 1/2 pound lean ground beef (90% lean) 1 can (7 ounces) pizza sauce 1/2 cup sliced fresh mushrooms 1/2 cup chopped green pepper 1/4 cup sliced seeded jalapeno peppers, optional 1/2 cup sliced ham, optional 1 cup fresh shrimp peeled and deveined, optional 1 can (2-1/4 ounces) sliced ripe olives, drained 1 can (14-1/2 ounces) stewed tomatoes, drained 2 cups (8 ounces) shredded part-skim mozzarella cheese Directions: Preheat oven to 400°. On a greased baking sheet, roll bread dough into a 14x10-in. rectangle, building edges up slightly. Prick thoroughly with a fork. Brush dough with olive oil. Bake 10-12 minutes or until lightly browned. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Spread pizza sauce over crust. Top with beef, mushrooms, green pepper, jalapeno peppers if desired, olives and tomatoes; sprinkle with cheese. Bake 20-25 minutes or until cheese is melted. Yield: 12 servings. Nutritional Facts 1 slice equals 227 calories, 9 g fat (3 g saturated fat), 23 mg cholesterol, 464 mg sodium, 23 g carbohydrate, 2 g fiber, 13 g protein. SPAGHETTI & MEATBALLS RECIPE Ingredients: 2 (30 ounce) jars spaghetti sauce 2 lbs. lean ground beef 2 eggs 3/4 cup dry breadcrumbs 1/4 cup fresh parsley, chopped 1 garlic clove, minced 1/2-1 teaspoon salt 1 teaspoon paprika, cayenne pepper and garlic powder 1/4 cup parmesan cheese 1 lb. spaghetti Directions: Place sauce in a large saucepan and simmer over medium heat. In large bowl mix beef, eggs, crumbs, parsley, garlic, salt, paprika, cayenne pepper and garlic powder and Parmesan. Shape into 18 meatballs. Place meatballs in simmering sauce. When sauce returns to a simmer, cover and cook 30-35 minutes (or more!) till cooked through. Serve sauce and meatballs over warm spaghetti. LASAGNA RECIPE Ingredients: 1 1/2 lbs. lean ground beef 1/2 lb. Italian sausage 1 large onion, chopped 2 garlic cloves, minced 1 teaspoon salt (or to taste) 1 tablespoon dried parsley flakes 1 tablespoon dried oregano 1 tablespoon dried basil 2 (14 1/2 ounce) cans whole tomatoes, un-drained and chopped 2 (6 ounce) cans tomato paste 24 ounces cottage cheese or 24 ounces ricotta cheese 2 eggs, beaten 1/2 teaspoon pepper 2 tablespoons parsley 1/2 cup grated parmesan cheese 1 lb. mozzarella cheese, divided 12 -15 lasagna noodles Directions: Brown ground beef, Italian sausage, onion and garlic. Add salt and next 5 ingredients; stirring until well mixed. Simmer 1 hour. Cook lasagna noodles according to package directions; drain and set aside. Spray a 13 x 9 baking pan with cooking spray. Combine cottage cheese, eggs, pepper, 2 tablespoons parsley, Parmesan cheese and 1/2 of mozzarella cheese; In a lasagna pan, layer noodles, meat sauce, and cheese mixture; repeat. Top off with layer of noodles; sprinkle evenly with remaining mozzarella cheese. Bake at 375F for 30 to 40 minutes, or until cheese mixture is thoroughly melted. BON APPETITE EVERYONE!
