Growing up, one of the fondest memories I have is of birthday dinners. My mom would let us pick anything to have for dinner and she would make it for us. If you knew my mom, you know you would definitely want her to cook you your favorite thing. She could cook like no one Ive ever known, any style, ethnicity, or dish, no matter how complicated. Another fond memory of my childhood is of the parties my mom threw. She could transform our tiny house into an assembly line, with our immediate family, my Grandma, and my Uncle Kevin all prepping, chopping, and doing other odd jobs. The food she pumped out was insane. Compliments flew out of everyones mouth. Everyone loved her sausage, peppers, and onions, her baked ziti, her mac and cheese, her vegetable dip, her potato salad, her coleslaw, her everything. As crazy and hectic as those days always turned out to be, one thing can be said for sure: my mom knew how to throw an amazing party. I only hope heaven knows how to throw a party worthy of you. Your life was cut short way too early, and I struggle every day to understand why. I hate living without you. I would give anything to have you back. Please say a prayer and wish my mom a happy 50th birthday in heaven today. Be grateful for every year you have with your loved ones.
