Guess its time for an update; Determined to move to New Orleans, I spent a couple of days at a friends house, looking for work, & it turns out a French Bistro in Metairie was hiring. I applied, spoke to the chef (who is VERY French), and now Im being trained to be the sauteé chef/hot guy. This is like Tony Nelsons x 250. But I love it so far.. Great instruction, great teamwork, awesome food.. Sort of playing this one by ear, but we shall see how it all works out. Im very optimistic. And Im in love my new place.. holy crap
