Guess what was for dinner tonight. ?Potato Soup and salad J Potato Soup and tossed Italian Salad inspired by Olive Garden. Quick, very inexpensive, and just in time for the winter. Enjoy: Potato Soup: Ingredients: 9-10 potatoes (depending on how much you want) 2 cans of Chicken Broth (Vegetarians can use vegetable) 3 Stalks of Celery ½ cup of chopped onion ½ stick of butter Garlic salt, garlic powder, salt and pepper to taste Parsley (optional) ½ cup of half and half shredded cheese bacon bits (turkey or pork) (optional) Directions: Peel Potatoes (you can leave a little bit of the skin on) Chop potatoes and place in a large pot (rinse with water) Add enough chicken or vegetable broth to cover potatoes Bring to a boil While the potatoes are boiling chop celery and onion throw in a small to medium size skillet, add garlic powder, butter, salt and pepper. Sautee until onions are caramelized (medium heat) Once potatoes are soft enough to mash, add half and half and allow to boil for another 5 minutes. Begin slowly mashing potatoes. Mashing the potatoes will thicken the broth. As soup begins to simmer, gradually stir in the celery and onion mixture. Sprinkle in parsley; stir again Allow soup to simmer until soup is desired thickness. Note: if soup gets too thick for your liking stir in ½ cup of water or broth to dissolve. Top with cheese and bacon. Enjoy Italian Tossed Salad 1 bag of Garden Salad Mix (You can use romaine or lettuce mix if you don’t want the carrots or cabbage) ½ chopped red onion (chopped not diced) 1 bag of Shredded Mozzarella Cheese 1 cup of Italian Dressing 2 tablespoons of Olive Oil Parmesan Cheese to taste 4-5 baby tomatoes 1 small can of chopped black olives (drained). Salt, pepper, garlic powder to taste Directions: Pour bag of salad into a large serving bowl Add onion, seasonings, mozzarella cheese, and tomatoes. Stir/mix ingredients all together Add black olives Add Italian Dressing and Parmesan Cheese Mix all together (if you have bowl with a secure tight lead shake vigorously) until salad is coated with dressing. Add olive oil and shake again. Sprinkle with Parmesan cheese. Serve and enjoy. You may add a little more Italian dressing to your individual salad plate or bowl.
