Gwen Barker Just an idea for everybody so here goes. These have to be made at home but they keep extremely well n a covered bowl n the fridge. A lil bit of sweet when its needed. 1 or 2 rolls of chocolate chip cookie dough, 2 8oz pkgs of cream cheese, 1 cup of sugar, 2 eggs, 1tsp vanilla & topping of ur choice. Preheat oven to 350 & line a 9x13 inch pan with parchment so it overhangs a lil. Press cookie dough n an even layer on pan. Mix cream cheese, sugar & vanilla & pour over cookie dough. Bake for 30-35 minutes. Top as desired. Let cool. Freeze to cut easier. This is a travel friendly cheesecake idea for when the comforts of home are missed. Give it a try. I know our truckers need to eat as healthy as possible but sometimes u just crave something a lil bad.
