HAPPY HALLOWEEN! When I’ve been to America or looked at American blogs around Halloween/Thanksgiving time, there is always a phantom tinned pumkin pie filling used in their recipes. I have never seen it in the UK, but love pumpkin pie, so I made it my aim this Halloween to produce something with the same flavour which is both raw, not too sweet and pretty darn healthy. So after some experimenting, here is what I have come up with. Pumkin puree can be used as a raw pumpkin pie filling, added to smoothies (see below), eaten with yogurt or even used as baby food! PUMPKIN PUREE INGREDIENTS 7 cups (approx) raw pumpkin flesh, cut into cubes 4 – 5 tablespoons melted coconut oil 1/2 cup dates 1/3 cup organic maple syrup or to taste 1-2 tsp cinnamon 2 - 3 tsp mixed spice (cinnamon, nutmeg, ginger, cloves) 1 tsp vanilla bean paste or the seeds of 1 vanilla pod or ½ tsp vanilla essence METHOD Blend/process the pumpkin cubes until they start to form a puree consistency Add all other ingredients and blend/process until it forms a smooth puree Add additional spices or sweetness to taste PUMPKIN PIE SMOOTHIE This smoothie is delicious! It is a great post workout smoothie because pumpkin is naturally high in potassium, which helps to balance lost electrolytes, and the cinnamon and ginger help to ease any inflammation (especially sore joints) as well as regulating your insulin levels. I use a hormone free, organic whey protein because my body responds well to whey but there are a number of tasty vegan protein powders on the market now too (to discuss in a post soon I promise)! INGREDIENTS 1 cup unsweetened almond milk ½ cup Pumkin Puree Cinnamon to taste I handful ice cubes Optional: 1 scoop (30g) good quality vanilla protein powder METHOD Using a high speed blender, add ice first, almond milk, puree and then spices and vanilla.
