Heres a frightfully tasty popcorn ball recipe for you to try using our tasty heirloom kernels - Dark Chocolate Coconut Popcorn Balls! Recipe below... DARK CHOCOLATE COCONUT POPCORN BALLS Ingredients: 10 c popped Tiny But Mighty Popcorn 3/4 c shredded coconut 2 c sugar 1 1/3 c water 1/2 c light corn syrup 1 tsp white vinegar 1/2 tsp salt 1 tsp vanilla extract 6 oz dark chocolate, chopped 2 tbsp butter Pop popcorn and put in a large bowl. Add shredded coconut and toss to combine. Set aside. In a medium saucepan combine sugar, water, syrup, vinegar and salt. Cook over high heat until mixture reaches 260 degrees F (hard-ball stage) on a candy thermometer. Turn off heat and stir in vanilla extract. Drizzle all over popcorn, tossing gently to coat. Wait a minute or so and when mixture is cool enough to handle press popcorn into 3-inch balls with lightly greased hands (wearing rubber gloves helps with the heat). Set on wax paper to cool. In a double boiler on the stove melt dark chocolate and butter. Drizzle over popcorn balls and add any extra shredded coconut to the top if you desire. Enjoy!
