HEALTHY DELICIOUS RECIPE: COLD QUINOA SALAD (Dr. Grays version) - Dr Gray will bring this in for Amys birthday pitch-in. They love it. Its healthy and very refreshing. 1 C Quinoa, rinsed 1 C water 1 C chicken broth (or use 2 C water only) 3 cloves garlic 1/4 C chopped fresh basil 1/4 C chopped fresh cilantro 1 tomato - chopped 1 lime (smooth limes have more juice) 3 TBS olive oil 1 avocado - cubed 1/2 cucumber - chopped 1 TBS chopped pumpkin seeds Himalayan Pink Salt and Pepper to taste Combine rinsed quinoa, water, stock, garlic and a little salt in medium saucepan. Turn heat to high. Bring to a boil, cover, lower to simmer for about 15 mins. Fluff with fork and transfer to bowl. Let cool. Add chopped herbs, tomato, cucumber, lime juice, olive oil and salt, pepper. Just before serving, add avocado as it doesnt keep as long. Serve alone or over salad greens and top with chopped pumpkin seeds.
