HEATH WATCH Did you know the health of your thyroid has an influence over the appearance of your skin? Your thyroid gland produces hormones that regulate your metabolism, helping you to maintain a healthy weight and a healthy body temperature. Thyroid hormones enable the cells of your body to produce energy and they also help to influence your mood and cognitive function. Source Sweet potato brownies 1 ½ cups mashed, cooked sweet potato 3 eggs 1 cup almond flour (or sunflower seed flour for nut free) 1/3 cup cacao or cacoa powder ¼ teaspoon baking soda ¼ cup melted coconut oil 2 tablespoons honey, or maple syrup, yacon syrup, or 10 drops liquid stevia ½ teaspoon vanilla extract Approximately 2 ounces of finely chopped 85% cocoa chocolate (optional) Preheat oven to 400ºF. Place all ingredients except mashed sweet potato and chopped chocolate into a large bowl and beat with electric beaters on low speed for approximately one minute, or until well combined. Add the mashed potato and beat again briefly until just combined. Stir in chopped chocolate, if using. Pour the batter into a brownie pan that has been greased or lined. Bake for approximately 35 minutes, or until a cake tester comes out with a few crumbs clinging to it. STAY ALIVE
