HOMEMADE BEEF PATTIES INGREDIENTS: PASTRY: 1lb. flour 1 tsp.baking powder 1 tsp.salt 1/2 cup beef suet 1/2 cup vegetable shortening 8 oz. ice water (approx.) a pinch tomato colouring in water, or a drop of annatto to colour pastry FILLING: 1 lb. ground beef 2 stalk escallion 1 stalk thyme 1 med. onion 2 cups bread crumbs 1/2 tsp. pepper 1 tsp. salt 1 tsp. sugar browning (optional) butter oil for glazing METHOD: To make pastry: SIFT FLOUR AND SALT- mix suet and vegetable shortening with some of the flour- mix suet mixture and remaining flour, add baking powder_ add water with colouring and mix until ingredients are bound together and leave bowl clean- the dough should be firm- turn on a floured board- knead until crack free. divide and shape into balls, cover and let it sit until ready to make patties. To make filling: heat mince meat in a sauce pan with just enough water to cover- use fork to seperate lumps- add finely choped seasonings and salt and sugar- cook until mince is soft, 30 minutes on low heat-add bread crumbs and browning if darker colouring is required- make sure ther is enough gravy to make the filling wet- add butter and allow to cool before add to the pastry- preheat oven at 350 F. on lightly floured board roll balls into circles add enough mince in center and fold over to form a crescent - press together and crimp with a fork or crimper,brushing a little oil on each patty. BAKE FOR APPROXIMATELY 45 MINUTES UNTIL GOLDEN BROWN AND SERVE HOT
