Pairing: 5 Rabbit Golden Ale, 12oz Btl. Olive-Oil Brushed Crostini topped with 5 Vulture Amber Ale Pan-Seared Chorizo, Chili Flakes, Crumbled Goat Cheese, & Crispy Kale. Pairing: 5 Vulture Amber Ale, 12oz Btl. 5 Rabbit Infused Entrees ~ Fresh Pappardelle in a Huitzi Midwinter Ale Rabbit Ragu with Huitzi Marinated Sautéed Sour Cherries. Pairing: Huitzi Midwinter Ale on Tap. Ki’Chun Belgian-style Strong Dark Ale Risotto with Ki’Chun Marinated Quail. Pairing: Ki’Chun Belgian Strong Dark Ale on Tap. Desserts ~ Rich Flourless Chocolate Cake drizzled with 5 Vulture Amber Ale Salted Caramel & topped with a dusting of Cayenne Pepper Cocoa Powder. Pairing: 5 Vulture Amber Ale on Tap. Fruit Tart with Vanilla Ice Cream & Sautéed Huitzi Midwinter Ale Marinated Sour Cherries. Pairing: Huitzi Midwinter Ale on Tap. From 5 Rabbit Cerveceria ~ 5 Rabbit is an elegant take on a classic golden beer. A base of high-quality malt contributes caramel and honeyed notes, and these are balanced by a brisk, clean bitterness. 5 Rabbit is familiar, yet fresh; sophisticated, yet fun. It’s a pale beer with surprising depth, a hearty and satisfying quaff. 5.3% 5 Vulture is a deep amber-colored ale with complex caramel and sugar cane aromas with a long dry and spicy finish. A small amount of roasted ancho chile is used to complement the toasty malt aroma, adding a fruity-toasty depth without heat or strong chile flavor. Unrefined sugar lightens the body for a crisp drinkability. 6.4% Huitzi is a Belgian Strong Golden Ale, brewed with hibiscus flowers, ginger, Thai palm sugar and local Chicago honey. It’s a winter beer that doesn´t wallow in the dark cold days of this season. Like its namesake, the Aztec hummingbird god Huitzilopoctli who smashed the winter to allow the sun to return, Huitzi looks forward to the brighter promise of spring. 9% Ki’Chun blends the apricot perfume of chanterelles with three malts and toasted oats. These are united by the exotic fruitiness of New Zealand Rakau hops and accented by a Belgian yeast strain. Dark Thai palm sugar lightens the body a bit and makes this beer dangerously drinkable, dry and creamy. 9.5%
