Had Arbi After so Long....wanted a different recipe for it and There came Gaurav s Recipe of Dhabe Wali Arbi........ It was super duper yummy !!! Though i avoided frying and kept it medium spicy .....as we personally liked it ...I can guess wat would the deep fried actually taste like :) Can Sumone pls Tag him !!!! Dhaba Arbi Recipe Ingredients: ½ kg arbi (medium size) 2 medium onions (chopped length wise) 2 medium tomatoes (chopped length wise) 6 pods of garlic chopped 4 inch ginger julienned 4 green chillies chopped 1 tspn jeera 1 tspn turmeric powder 1 tbspn coriander powder Salt to taste 4 tbspn Chopped fresh coriander 2 tbpn oil 2 tbspn ghee Oil for frying For fresh grinded dry masala: tspn black peppercorns, 1 star anise, 1 cinnamon stick, 3 moti elachi, 1 red dry chilly, ½ tspn moti rai (roast all together and grind to poweder) For curd mixture: 1 cup curd , ½ cup water, 1 ½ tbspn besan, 1 tspn hing , blend and mix all. Method: Boil the arbi by giving 2 whistles in the cooker and cool it immediately, peel it and cut in half roundels and deep fry. Now in a kadai add both oil and ghee , add jeera to it let it crackle and add garlic now when the garlic is brown add the onions and fry till a little golden in colour and add the tomatoes fry till leaves oil add all the dry ingredients and mix till done now add the curd mixture to it and bring to a boil and simmer for 5 minutes till thick in consistency add the arbi , green chillies and ginger mix and cook for about 2 minutes and balle balle punjabiyan di shaan wakhri te punjabiyan da dhaba bhi. Serving Style: Take a round shallow white base dish place the arbi dhaba in it garnish with fresh coriander. Best enjoyed with tandoori roti or paratha garma garam
