Had a batch of tomatoes from my garden that were going to spoil if not eaten soon. So, I diced them up and roasted them in the oven using my large cast iron skillet (well lube with olive oil). Along the way added some spices and a little bit of red wine. The spices for this batch included fresh basil (well, it was frozen fresh from the garden last year!), oregano, ground bay leaf, rosemary, and a spoonful of ground cumin. Smells fantastic!! LoL! along with a batch done last week I now have about 4 quarts of tomatoes in my fridge.
