Half way !!!!! Reflections of Day 15 of The 30 Clean: I love Mondays!! Maybe Im the only one. I teach a lot of classes, but I love all the clients I get to work with at each studio. I teach Cycling at Equinox at 6:15am then head over to Group Interval Training to teach the 8:30 and 9:45am. Normally I would do my own workout after that but this day I had a Chiropractic appointment followed by a therapeutic massage for my shoulder. I head back to Group Interval training to teach the 4:30 and 5:45pm. I also had the pleasure of making dinner for Amanda Hernandez and Laura Perez!! What I ate: I had a Fuji apple on my way to Equinox. After cycle I had chia and almond milk with banana and blueberries. I also ate 1 hard boiled egg. After my last morning class I had 1 more egg and snacked on some veggies, celery and almond butter before my appointment. When I got home I made a salad with spinach, kale, zucchini,broccoli, red bell peppers and avocado. I also added some chicken from the previous night. For dinner I made lettuce cup fajitas. I bought steak and cooked it in the Forman grill only seasoned with sea salt and pepper. I sautéed up onion, mushroom and green pepper. I used coconut oil to cook the peppers and it did leave a trace of coconut flavor which I enjoyed. I made some quick guacamole and had salsa from trader joes (all natural). On the side I chopped cauliflower up in very small pieces to look like rice. I sautéed onion then added the cauliflower and cooked it on medium heat for 5-7 minutes. When it was done I threw on some cilantro and squeezed a little lime on top. Instead of tortilla we used butter lettuce cups. It was so good! The unorganized: I have to admit Ive never been much of a cook. Im having troubles getting everything to be ready at the same time. With some veggies it seems to need to cook longer than I had expected. Salads are simple ...I think thats why they are my go to meal. I did have a lingering headache in the evening. I think I hadnt had enough water. I tried to make up for it before I went to bed. The perfect combination: I really enjoyed the taste of dinner. It had so many flavors, it was filling and, for the most part, was very easy to throw together. It was a reminder that there are lots of good eating options that dont have to be salads all of the time. I cant believe its already been 15 days! Its starting to feel normal.:) Day 15 down and 15 to go!!
