Happy Holi :) Someone posted the recipe of Balushaii in a food group last night when I was deep asleep. When I woke up this morning and saw that post while checking my Facebook updates ( that’s the first thing I do each morning), I just could not resist the temptation of making it immediately as this is one of my favorite sweets and the recipe looked simple. It was going to be my maiden try at this. Decided to take advantage of the fact that today is a work from home Friday for me and this evening we have a family get-together at my Uncle’s place and then it is Holi this weekend. I wasn’t planning on making any sweets this time as such because I feel sweet making requires some great skills and patience and most of my attempts in making sweets or even baking has not been very rewarding . But something told me that this Balushaii is going to make me rise and shine today. So this is what happened at 6:30am this morning :) :) Here is the recipe Rashmi Pawe posted in the other group . Preparation time was 20-30 minutes depending on how many you make . ************************************* Maida- 350 gms Ghee- 100gm Soda bi carb- 1/4 th tsp Salt- less than a pinch Boiling water- 75 ml or more for kneading Refine oil for deep frying Mix the maida, ghee, soda and salt well using two fingers and knead to a soft dough, adding boiling water at a time Shape into balls, flatten a bit and press the centre with your thumb. Heat oil and fry first on medium flame then low, till well cooked. Sugar Syrup 400 gms sugar, 250 ml water. Boil till a one-thread consistency is reached. Add a few saffron strands (optional). Soak the balushai in it for 5-10 minutes, strain out of the syrup. Serve or transfer it to flat storage container.
