Happy Hump Day! We hope your day is going great. We posted the Tuscan Herb Roasted Italian Beef yesterday, so today, we will post a Cranberry Pear Quick Pickle recipe. Enjoy! Ingredients English Cucumber - sliced thin Sweet Onion - sliced thin Cranberry Pear Balsamic Vinegar Salt Pepper Place the cucumbers and onions in a container with a lid. Season with salt and pepper. Pour in enough Cranberry Pear to cover everything. Put the lid on and place in the refrigerator for at least 30 minutes, turning them once to make sure everything is coated. They will keep in the refrigerator for about one week. Eat as a snack, serve on the Italian Beef Sandwich, add to any salad...feel free to be creative.
