Happy New Year! “The common expression, “He is as Dutch as sauerkraut” shows the prominence of sauerkraut in this regional cookery. In fact, the year is begun with sauerkraut. It is a New Year’s Day custom that dates back to Colonial times. We eat sauerkraut on the first day of January for health and good luck. This is a must!
