Happy Saturday, here’s a quick one-pot Saturday night supper dish of sausages and cherry tomatoes with balsamic vinegar. 10 minutes prep and 30 minutes in the oven, serves 4 Pre-heat your oven to 180C (Gas mark 4). In a large roasting tin toss together 12 of your favourite sausages with 6 sliced garlic cloves, 2 red onions cut into wedges and a splash of olive oil, cook for 15 minutes, until the sausages have started to brown. Add about 600g cherry tomatoes cut in half and 3 tbsp balsamic vinegar. Season with sea salt and black pepper and toss together gently. Return to the oven for another 15 minutes then stir in a handful of torn basil leaves just before serving. Great with chunks of crusty bread to mop up the juices – Enjoy!
