Happy braai day :Peri Peri Chicken with Grid Cakes 25 Mins Serves 4 Nothing beats the aroma of freshly baked (or in this case, freshly braaied) bread. INGREDIENTS Chicken •Chicken pieces •Castle Peri Peri Marinade •Castle Braai Shaker •Juice of 2 fresh lemons Grid Cakes •500 g basic white bread dough (bought from your supermarket bakery) INSTRUCTIONS Chicken 1.Place chicken pieces in a Ziploc bag, cover with marinade and shake well. 2.Refrigerate for 2–3 hours. 3.Remove and spice liberally with Peri Peri spice from the Castle Braai Shaker. 4.Braai over moderately hot coals for 15–20 minutes, turning regularly and basting with marinade on each turn (never use the marinade that the raw chicken was in contact with). 5.The chicken is cooked when the inside juices run clear, and the skin is crispy and caramelised, but not black. 6.Remove from the grid and drizzle immediately with fresh lemon juice. Grid Cakes 1.On a lightly floured surface, roughly flatten the dough to a thickness of about 8 cm and cut into 6­–8 pieces. 2.Cook over hot coals to form a crust (about 30 seconds a side), then cook slowly over medium coals, turning regularly. 3.The bread is done when it sounds hollow when tapped. Eat with butter and jam.
