Have been experimenting with vegan gluten-free pancakes. I finally figured out a combination of ingredients and amounts that work. My husband loves them (and he is not vegan or gluten free). I have cooked them for friends and family and so far have had all positive feedback. I thought I would share them with my friends. I cook them on a medium heated griddle with just enough olive oil to grease the griddle. Robins Vegan Gluten-Free Pancakes 1 cup Brown Rice flour ( I am going to experiment with Coconut and almond flour too as soon as I can find some at a reasonable price) 1 Cup water (sometimes I use part unsweetened Almond milk, part water, which makes them a bit thicker, but my husband prefers them with all water) 1 mashed ripe banana 1/2 tsp (little bit heaping) Baking Soda 1/2 tsp (little bit heaping) Aluminum Free Baking Powder 1/2 tsp vanilla 1/4+ tsp sea salt (I dont really measure this, I just pour some in my hand and dump it in) 1.5ish Tbs Olive Oil or Coconut Oil Mix all the ingredients and stir. Dont add the water all at once as you may find you like the consistency before the whole cup is added. What I do is I only put in about 1/2 cup, then add water a little bit at a time, while I am stirring, until it is the perfect consistency. It may even add up to more or less than a cup in the end. Its all about finding what you like best...thin or thick. If you make them thick, there wont be bubbles while they are cooking, so you will have to watch the edges to determine when to flip them. If you make them real thin, they do fall apart a little easier, and are more like a crepe, but they are just as yummy! This makes about 6 small pancakes (medium thickness) and fit on a griddle perfectly (there are only 3 in my picture because the other 3 have already been eaten, haha!). These pancakes fall apart easier than the typical pancake, but if you want a vegan or gluten free version, I think mine are great. My husband says they are like dessert and he actually asks me to cook them for dinner sometimes. Hope you enjoy!
