Have to share my serendipitous cooking experience with everyone on this list! Earlier this week, I was lucky enough to be able to go to a local churchs vegetable garden (one of my neighbors goes to the church), and the garden has been used to supply a local shelter all summer, but was opened to the public a week or so ago, because theres still a lot there, but no one to pick it. I picked on Tuesday for the youth center where I volunteer, and then went back to pick for myself on Thursday. So... Since Thursday, Ive cut up and frozen tons of butternut squash, eggplant, shredded zucchini for zucchini bread, and swiss chard for soups... Put the last through the food processor. Made a huge batch of eggplant Parmesan, made a couple of chocolate zucchini cakes, and STILL had a large bag of smaller eggplant to deal with today. Thought Id try making baba ganoush for the first time ever. Washed and sliced the eggplant lengthwise, put on a cookie sheet on the parchment foil Ive mentioned before, brushed olive oil lightly on top, and LIGHTLY sprinkled with sea salt, and then roasted until nearly burnt at 400 degrees F (about an hour). Remember, I said SMALL eggplants!!! Well, when I took them out, most were really too small to scrape for the baba ganoush. Had a friend over, and she started picking them off the cookie sheet. I also tried them, and they were like chips!!! Even Colleen, my VERY picky wife, loved them!!! Had no clue when I started that theyd be so good... Had to share my story! :-)
