Have you got a cast iron skillet? Try this roast chicken, its the best you will ever eat, at least to me it is. Heat your oven to 450, put your skillet (10 or 12 inch) in the oven to heat, rinse and pat dry a 4 to 5 pound whole chicken, rub it with oil, mix 2 tbsp. of kosher salt and a tsp of black pepper, rub it all over the chicken, tie up the legs with twine, and tuck the wings, put it breast side up in the hot skillet, cook for 40-45 minutes, turn off the oven DONT OPEN the OVEN, leave it in the oven for 35-40 minutes. The skin will be crisp but salty, the chicken will be deliciously tender, so dont eat the skin if you dont like the salt. You will like this chicken, we eat it once a week.
