Having to watch my carbs and fats so closely, and now being restricted with the red meat and shellfish, I am really pressed, at times, to find recipes and food that is satisfying and healthy. I did come up with something that turned out pretty darn good using chicken breasts and my trusty crock pot. 3 to 4 large boneless, skinless chicken breasts, each cut into 2 or 3 pieces 1 medium onion, coarsly chopped 2 cloves garlic, chopped 4 carrots, peeled and cut into 2 pieces 1/3 cup white or pink wine (if you have a slightly sweet one, thats best) 2/3 cup chicken broth or stock 2 tsps sage (dried variety) 1 tsp thyme 1 TBSP paprika 2 bay leaves salt pepper cooking spray Sprinkle chicken pieces with salt and pepper. Sear chicken breast pieces just enough to lightly brown them in a pan sprayed with cooking spray (I used the olive oil flavor). Place them in the crock pot along with all the other ingredients except the stock and wine. De-glaze the browning pan with wine and pour over the chicken. Add your broth/stock and cook on high for 4 hours or low for 8 hours. It will make a wonderful chicken au jus or, if carbs and calories are not an issue, add some thickener or cream of chicken or celery soup to the juice. This is wonderful with whole grain noodles but rice, potatoes or any other starch would do.
