Hawthorn ketchup? They are full of powerful anti-oxidants, about which numerous scholarly articles can be found extolling their virtues as a heart medicine par excellance. Best thing is, they can be quickly turned into jams, fruit leathers, and my latest craze, gentlemens sauces and ketchups. Take your sifted and prepped haws, cover with enough vinegar and water (ratio 2:1) and simmer for 30 mins or so with a muslin bag containing spices of your choice (I highly recommend assa foetida in there). Then sieve and strain through muslin, return to heat while you add some sugar to taste, simmer a little more, then decant into sterilised bottles and voila! Heath boosting ketchup for you and your family!
