View more Company size: 100-499 Contact person: Ms. Tram - HR dept Work Location Quang Ninh Job Level Manager Job Category Airlines/Tourism/Hotel Food/Beverage Preferred Language English Job Description * Key Accountabilities: • Directs and organizes the activities of the activities of the Kitchen Production Department which includes a variety of responsibilities such as establishing and maintaining the required culinary standards; •Assisting in developing the specifications for the purchasing of food and related products; •Ensuring the proper use and maintenance of kitchen equipment as well in all cruise ships as well as training employees, hygiene, haccp and occupational safety standards based on ISO standards; •Sets budget goals and control set minimal food cost expenses; •Knowledgeable in kitchen lay-out and design, menu food costing; •Promote and maintain good working relationships with all departmental staff •Manage day to day activities of all Chefs on board, coordinates and communicate specific tasks; •Work with all operations department in recruiting, training to achieve high standard of quality of food productions by emphasizing the importance of presentation, developing new dishes and garnishes. •Carry out, monitor and coaching role to all members of the team •Manage and control daily food costs to ensure that food production is within the budgetary limits on the production of all dishes. •Coordinates with purchasing department in ensuring good quality products from vendors/suppliers including kitchen supplies and ensure recording process. •Promotes culture of essential hygiene practices connected with storage, cooking and storage of food; the importance of clean, tidy and hygienic working practice such as use of knives, chopping boards, table surfaces etc. •Lead by example in observing the rules concerning personal hygiene and appearance. •Monitor activities in line with the Hazard Analysis Critical Control Point (HACCP) •Ensure compliance with all food hygiene regulations are adhered to within the kitchen environment in accordance with Health & Safety regulations. * Benefit and Compensation: •A very competitive salary and benefits – fixed monthly paid + extra - incentive •Social & health & additional insurance policy covered •Accommodation provided •Free meals •Being part of a rapidly growing company which can offer career growth prospects •Work with an equal opportunity employer so you will always be able to advance on your own merit.
