Health/ Sanitation habits @ Dewey Destins Harborside that were worrisome for me... The uncovered lemons sitting outside all day on ice or sometimes water? Nah, never was much for lemons. The flies or fly paper hanging about in the kitchen? Nope, the cooler weather seems to have solved that..... My top three: 1.The manner in which fish,shrimp,chicken, burgers and steaks all share the same reach-in cooler. Granted the beef is wrapped, each item in or on its own pan/tray but some in their own juices or degree of thaw. I am sure the cooks change out their gloves prior to every kids chicken and after as well during the peak hours, but still.. 2. The continuing mold issue in all the soda machines. I have cleaned and shown some of those in charge or owners how to do it to no avail... Yes Kevin, I know.. Until my sister buys my restaurant I have no say and the correct and proper procedures will have to wait. Did I mention safe? 3. Not a fan of how during season cases of frozen fries are put on the floor next to the fryers. Curious what is done with those fries that have thawed but not used...refrozen? Gum they should be delicious at lunch the next day!
