Healthy Banana Muffins 6 tablespoons canola oil ½ cup brown sugar 1 egg ½ cup non-fat, plain Greek yogurt 5 ripe bananas, mashed 1½ cups whole wheat pastry flour 1½ teaspoons baking powder ½ teaspoon salt Preheat oven to 350°F. Line muffin tins with paper liners. In a medium mixing bowl combine the canola oil, brown sugar, egg, and yogurt. Whisk to combine, and then stir in the mashed banana. Stir in the flour, baking powder, and salt. Use a ¼ cup measuring cup to portion out the batter into the 18 lined muffin cups. Bake for 23 to 25 minutes, or until the tops of the muffins are nicely browned.
