Healthy, diabetic-friendly Banana and Brown Bread Pudding :-) Ingredients: 5-6 Brown bread slices 2 pulped bananas 1cup milk 2 eggs 1tsp cinnamon powder 4-5 sachets of sugar free (or as per taste) 1 tsp vanilla essence Method: 1) Grease the baking dish with butter. 2) Break the brown bread slices into smaller bits and layer onto the dish. 3) After the first layer (should be thick), add banana pulp. 4) Repeat the process. 5) In a separate bowl, mix beaten eggs, milk, cinnamon, sugarfree, vanilla essence. Add this mix to the bread and banana layers so that the bread is well soaked. 6) Bake for 15-20 min in the oven at 200 degrees Celsius. I baked it by keeping the dish on the bottom shelf so as to make sure the pudding bottom is well cooked. I havent added any, but some soaked raisins would taste awesome in this! :-)
