Heathy paleo banana pancakes, which wont leave you feeling bloated! Birthday breakfast for my 8 year old today. These fluffy pancakes packed with protein are a great way to start the day. Ingredients: (yields 4-6 pancakes. I doubled the recipe) 1/4 cup coconut flour 4 eggs (ideally room temp) 2 tsp vanilla extract 1/2 banana 1/4 tsp salt 1 tsp baking powder Coconut oil for cooking Serve with fresh banana, berries and maple syrup. Method: Mash the banana and add to a bowl. Mix in all the remaining ingredients. Heat a non stick pan and add some coconut oil. Add a 10cm dollop of the mixture. Cook on each side for approx minutes. Mixture is delicate so be careful when flipping. Enjoy! X
