Heavenly Hummus (serves 4) Basic hummus recipe: • 1 cup sesame tahini • 2 cups cooked garbanzo beans (chickpeas) • 3-4 cloves garlic • ½ cup olive oil • 1 tsp. cumin powder • Juice of 1 lemon • Sea salt to taste Blend all ingredients together in a food processor or blender. If using a blender, use the pulse button and stop and stir often to keep the motor from overheating. Serve with your favorite Middle Eastern fixings: falafel, Greek salad, tabouli, pita bread, etc.. Or wrap in a tortilla with lettuce, red onion, tomatoes and a little tahini sauce. Enjoy! Variations: The basic hummus can be changed or added to make different kinds- • Raw Hummus: Instead of cooking garbanzos, sprout them for about 3 days. Use raw tahini and cold-pressed olive oil. Make like regular hummus. • Roasted Red Pepper Hummus: Add 1 roasted red pepper when blending • Caramelized Onion Hummus: Add 1 onion that has been caramelized to the blender • Sauteed Mushroom Hummus: Add ½ cup sautéed shiitaki, button, or crimini mushrooms before blending • Curried Hummus: Add 2 tsp. hot or mild curry powder • Add extra garlic, some parsley or cilantro, cayenne pepper for other flavors. Tahini Sauce: (makes 1 cup) • 3/4 cup sesame tahini • Juice of 1 lemon • ¼ cup olive oil • Sea salt to taste Mix together well. If too thick add a little water to make a creamy, smooth sauce. Serve with falafel, salad, or any Middle Eastern dish. Enjoy!
