Hello Veggie Gardeners. It’s Live Question Time again. I have too many zucchini. The tomatoes are starting to come ripe and the cucumbers are coming daily. I have pickled more gherkins than ever before. It is so lovely to meal plan in the garden, usually a meal involving zucchini in some way. Fresh tastes so good. But it is even better to put some aside for a cold and gloomy winter day when a casserole full of summer goodness brings back memories of these blue sky days. My top tip is an easy one – freeze tomatoes whole with the skin on, and in the winter, a few seconds under the tap and the skin slips off, then into a casserole where it will melt into it nicely.
