Hello everyone I hope our all enjoying your Friday . Well since its been raining a lot I was thinking of soup. So here is an easy and quick one. Roasted Potato and Bacon cream. 3# Potatoes (rough chopped no skin) 1 1/2# Bacon(hole) 1 ea. large white onion (rough chopped) 1/2 ea. large carrot (rough chopped) 1/2 ea. celery (rough chopped) 3 ea. cloves of garlic (minced) 2 tbsp. fresh oregano (minced) 1 1/2 c. white wine 5 c. white chicken stock salt &pepper to taste Preparation: 1. In a stock pot cook the bacon till is crunchy, take it out of the pot and place in a cutting board. 2. Add the potatoes and the rest of the vegetables, when is translucid deglace with the wine, when half of the wine is gone add the stock. 3. Season with salt and pepper, add the oregano, and finish cooking. 4. While the cream finishes cooking crush the bacon . 5. When is coked proses( it can be done with the blender or a hand blender). When the plate is served you can add cheese if you want, I recommend Pepper Jack or Cheddar and finished with bacon. ENJOY!!!!!!!!!! Let me know if you liked
