Hello everyone! Is it Summer or is it Spring?? What a mixed up couple of weeks - and how tragic to see the fate of so many apricots and cherries! A good tree ripened, juice-dripping apricot is almost unmatched in the tastiness department. In my books, it almost compensates for not having mangoes. How indulgent it is to have those blushing orange fruits for a small glorious window each year. Usually the thought of cooking an apricot is almost inconceivable - they are too good fresh - but if you are rescuing precious apricots from the earth, and have more jam in your cupboard than friends to give it to, here are some other ideas: apricot ice-cream dried apricots or roll ups (using a dehydrator) stewed apricots poached apricots apricot pie honey roasted apricots Apricot Tart (*denotes ingredients available at the co-op) Crust 1/2 cup tasteless coconut oil* 2 cups light sifted flour* 2T honey* 1T amaretto 2T water Put the flour, oil and honey in a food processor and pulse, then slowly add the amaretto and water until the dough comes together. Refrigerate for 30 minutes Heat the oven to 180 and grease a round flan pan Remove dough from the fridge, roll out and line the pan. Poke the dough with a fork. Cook for about 20 minutes until light brown around the edges, then remove from oven. Filling 3T tasteless coconut oil* 1/2 cup raw sugar* 1T linseed* 5T milk 1 cup almond meal* 2T light sifted flour* pinch salt 1teaspoon apple cider vinegar 8 apricots, sliced Whilst dough is cooking, cream the coconut oil and sugar Grind linseed in a coffee grinder. Stir into milk. Add linseed/milk mix to oil/sugar mix, then add the rest of the ingredients except apricots. spread the filling across the crust, then top generously with apricot slices. Cook for a further 45 minutes (to avoid burnt crust, you can crimp alfoil around the edges).
