Help! I mixed up a Tartine loaf tonight but in the middle of weighing the bread flour I ran out and had to get another bag of flour. I just realized that because of that I only weighed out 700 grams of bread flour instead of 900 g. While I was doing the stretch and folds I noticed the dough was sticky and when I was shaping the dough I had to add some flour just so I could handle it but even so it was really sticky. I managed to get them into bowls and into the fridge. It wasnt until I went to bed that I realized what I had done. Is this dough a lost cause? Should I try to bake it tomorrow? Should I use it for pizza dough or something else? Is there any way to fix my mistake?
