Help/suggestions/thoughts: So I filled up the Egg with lumps and brought the temperature up to 400 and let it stay there for a while. I then set in plate setter in for about 15 minutes. Everything still fine. I then in added the turkey, which was placed in a rack within a calphalon roasting pan. The temperature went down a bit, I gave it some time and it still remained below my desired 400 degrees, so I open the top flute to allow in more air and brought up the temperature. Watched it and it stayed at 400. Returned 30 min later, still at 400. As per the directions I had I then took the turkey out to flip it. When doing so I closed the lid back. Immediately upon doing that the temperature shot up to 600 and I mean immediately. This suggested to me that the temperature was at that level when the turkey was in there, but the turkey was disturbing the thermometer. I leveled it off, but I guess because it was burning so hot for the period of 30 min that I ended up running out of lump coal as it lasted only 3.5 hours. What exactly did I do wrong?
