Henry Patland and his beautiful wife are coming to Odeum tonight. We have baby goat, veal sweetbreads, chanterelles and beautiful local fresh anchovies which are mind blowing. I remember going to the market in Italy with my grandmother when I was 11 and buying like 5 pounds of these anchovies. They would wrap them in brown paper. When we got back to her house she spent all afternoon cleaning them. She cooked them with extra virgin olive oil, smashed garlic, oven cured tomatoes, gates olives and fresh oregano from the yard. Oh yes and pepperoncini. When they are this fresh they dont need a lot of ingredients. I remember like yesterday this meal. Going to make it the same tonight. 🍷🍴
