Ricotta Cookies-Paula Gati 1 cup butter 2 cups sugar 2 eggs 1 lb ricotta (whole milk) 4 cups flour 1 tbl baking powder 1 tbl baking soda Glaze 4 cups confectionary sugar ( 1 lb box) 1 tbl vanilla extract milk cream butter in stand mixer add sugar and beat till soft and creamy,, add eggs one at a time and store in ricotta….mix all dry ingredients add to ricotta mix..one cup at a time and blend till mixed thoroughly. drop with cookie scoop on parchment lined cookie sheets and bake 10-15 min or till bottom light brown… cook then mix glaze ingredients adding milk tablespoon at a time till smooth and fairly thick…spoon glaze over cooled cookies and sprinkle colored jimmies on top..
