Here as promised for Mary and anyone else who would like to give it a go is the recipe for the Battenburg! Battenburg Cake Ingredients: 6oz sifted self- raising flour 6oz caster sugar 6oz soft margarine 3 large eggs 1tsp vanilla extract Pink food colouring Approx half a jar apricot jam 1lb 2oz/500g marzipan Method: Preheat the oven to 160c/325f/gas mark 3. Grease and line two 20cm/8in square sandwich tins. In a mixer (or a large bowl) beat the sugar, margarine, flour, egg and vanilla until really pale and fluffy. Divide the mixture in two and carefully colour one half pink, leave the other half as it is. Spread the mixture into the tins, one colour in each tin. Bake for 15-20 minutes or until cakes are firm and springy to the touch. Gently remove from the tins and leave them to cool on a wire rack. Sieve the apricot jam to remove the lumps and spread a thin layer of jam on top of one of the cakes then put the other one on top. (do not over do the jam you only need a thin scraping at all times for it to stick to another piece, palette knife works best) Trim the cakes so that they have really sharp, straight edges and then cut the double layer cake into four equal strips. Take one strip and thinly spread jam along the cut edge, tip it on its side so the jam is facing up. Take another strip and invert it to lie on top of the jammy edge so that you have pink next to pale. You should now be looking at a naked battenburg!! Repeat this process with remaining 2 strips. Roll out the marzipan (light dusting of icing sugar will prevent it from sticking) so you have enough room for 2 rectangles of approx 7x11 inches. Spread the whole of the outside of each cake with thin coating of jam then sit on top of the marzipan and roll to cover trimming off excess so you only have a small seam. Trim at each end of cake for a sharp looking finish. Wrap each cake tightly in cling film keeping the square shape and leave in a cool place for a couple of hours for everything to gel together! Then make a cuppa and enjoy!!!
